This protein recipe is what I consider to be a “functional food”. It’s definitely not winning any baking contensts, and it does NOT taste like a cupcake!
To achieve your physique goals, you may have to sacrifice some flavor (or none) in order to get the food you want!
This basic Minute microwave protein cookie has a lot to offer! I’m definitely experimenting with different proteins and flavors. BUT, the basic recipe doesn’t change.
(and FWIW- Don’t leave off the whipped cream!! This recipe calls for it!
- 1 Spoon Almond milk (vanilla unsalted)
- 1 large egg
- 1 Spoon Almond butter
- 1 Take a look at the scoop Vanilla Protein Powder (CSE)
- 1/4 Take one teaspoon Baking powder
For cinnamon roll flavor
- 1/4 Take one teaspoon cinnamon
- 1/4 Take one teaspoon stevia
- 2 Spoonfuls Whipping cream
Combine almond milk, egg and almond butter. In a separate bowl, combine protein powder, baking soda, cinnamon, and stevia.
Combine the wet and dry ingredients. Mix them in a ramekin.
Place ramekin in microwave. Cook for 60 seconds at 50% power. Test the doneness of the microwave cake by touching it. If the microwave cake is still wet, heat it for 30 seconds at 50% power.
Remove from the microwave. Drop the ramekin into a plate.
