Full disclosure! I am not vegan. I do have a few vegetarian and vegan friends. In fact, 3 out of 13 people on our river trip were vegan.

Because I love to cook for my friends, it was necessary to have a vegan waffle for Sunday brunches.

This vegan waffle was the perfect choice! It’s easy and delicious! Your friends and family will ALL enjoy it, even the ones who aren’t following a vegan or vegetarian diet.

What is a Vegan Diet and How Does It Work?

According to the Vegan Society, a vegan diet is recommended.

So, typically with waffles, you’d have some ingredients that wouldn’t be vegan, such as milk, butter, and eggs.

With this recipe however, you don’t need those! We substituted almond milk for milk. The coconut oil replaces butter and helps to bind the ingredients together. The apple cider vinegar helps with the leavening.

What you get is a vegan waffle. It tastes just like a waffle with milk, butter, or eggs!

Delicious homemade easy vegan waffles
  • 1 Cup Almond milk
  • 1 Cup All-purpose flour
  • 3 Spoon Coconut oil
  • 2 Use tablespoons pure cane sugar
  • 1 Spoon Baking powder
  • 1 Take one teaspoon vanilla extract
  • 1 Take one teaspoon apple cider vinegar
  • 1/2 Take one teaspoon Salt
  •  In a medium size bowl add the milk, apple cidervinegar and vanilla extract. Mix well.

  • Next, add the flour, baking powder salt, sugar, and coconut oils. Continue to whisk until the batter is well-combined.

  • Spray non-stick spray on the waffle maker after heating it up.

  • Add about ½ cup of batter to the waffle maker (per waffle) and let it cook for about 3-4 minutes on high.

  • Serve with your favorite fruits or syrup.

  • Enjoy
