These gluten-free protein blueberry pancakes are quick and easy. They only require 4 ingredients: Egg whites and protein powder, banana, and blueberries.
When pancakes for breakfast can be high in protein, I’m all in! I’ve honestly got several pancakes on my blog that “Are my favorite ever”. haha. But really, each one has a purpose, and I’ll make different pancakes according to what I have in my pantry, and what my macro goals are for the day.
What’s the protein in these pancakes?
Two sources of protein Egg whites and protein powderThe entire recipe for pancakes contains 25 grams of protein when I use Clean Simple Eats protein powder. Other protein powders might have more, but the CSE contains only 100 calories per serving, so I prefer to use this one. It also bakes well for pancakes.
This recipe also includes a mashed banana, blueberries, and other ingredients. You can’t get much cleaner than this!
I’ve tried pancakes without the mashed banana, and I don’t like them as much. I prefer the texture of the banana in pancakes.
- 1/4 Cup liquid egg whites
- 1 Scoop Vanilla Protein Powder (CSE) Link to get 10% off
- 1/2 Banana Mash
- 1/4 Cup blueberries
- 1 Butter-flavored cooking spray
Mix egg whites with protein powder. Blend a banana and add to the bowl.
Spray a nonstick saucepan with cooking spray. Place it on medium heat.
Scoop 1/4 cup at a go onto a skillet. Drop 3-4 blueberries onto the batter. Cook both sides until the batter is no longer runny.
Remove from pan and cover with sugar-free syrup
